Flat iron Steaks

I just discovered a grocery store in town here that has these steaks. I remember some discussion about these but can't find anything. Has anyone grilled these before? Should they be marinated?

I use a Maple flavored curing salt, brown sugar and maple wood for smoking. Just got done a big batch for the holidays.

Hey Justin, I recently moved to Campbell River from Ont. I make my own sausage/ham/bacon as well. so far I have found endless supplies of alder and limited amounts of maple. Do you have any favourite local wood?

Glad to see there is another pheasant plucker on the board. I'm with Diva on her recipe but I would brine it overnight in the standard poultry brine.

I've done them often Peter. If you can get nice not too fatty ones they are awesome. I cook them the same way as back ribs except maybe do 3-2-2 depending on how meaty they are.

I do alot of salmon on the cedar plank and experiment with various rubs. The Fish Crisp maple smoke rub is really good. Diva replace sugar with Splenda but use much less Splenda than sugar as it is very concentrated. It also comes in brown sugar flavour.
