Those definitely look awesome. Personally, I am not a big fan of chicken enchiladas, I prefer beef or pork. But there is no way you can go wrong with that recipe.

And I 100% agree with you about the onions. :D

Cool, thanks Chris Here are a few pics from my first smoke. I started with pulled pork (7 pound Boston Butt.) I used a basic mustard and dry rub and then let marinade over night. Fired the smoker up at 5:00 AM and started smoking the pork at 5:30 AM. I pulled the pork out at 186 degrees at 5:00 PM. ...

My First Time Smoking

Saturday, I was able to get my new smoker going and I had great success for my first pulled pork. I would like to post some pics but I am not sure how. I have the pics on both my desktop and already uploaded them to my comcast photo account.

Charcoal, I seasoned my propane smoker today and ended up with that same oily smell. I bought it on Ebay for $159.00 which should be delivered today (Wed.) I have read both good and bad reviews about the smoker. Hopefully I'll have a good experiance, and if not the seller does have a return policy. So we will see. :D
