Is it confirmed yet the timing for entries? I remember reading that the order and times were going to change from the traditional 12:00 chicken, 1:00 brisket, 2:00 pork, 3:00 ribs.

Go to a barbecue store or restaurant supply store and get yourself a CALIBRATABLE thermometer. These will have a little nut on the back to adjust settings and instructions on how to calibrate. One thing not mentioned in the article that I find helpful is after trimming the brisket find the grain of the flat and cut a good sized 3-4" chunk of the end 90 degrees to the grain. Where are you located? If anywhere within driving distance of Toronto check out www.bbqs.com . They are about 20 minutes north of Toronto just off Hgwy 400 and their variety of grills is quite impressive.

It was more of a Masonic type initiation(no signature and only a small amount of bloodletting) and a promise to improve our brisket and chicken.
