Re: CSBBC 2009 RESULTS *OFFICIAL*

and it appears we are going with a few blues bands.
I have some connections, including the 3rd place Memphis /09 (out of 100) final band MonkeyJunk as well as others. No promises, naturally, as summer is the big festival time for most bands, but I'd be happy to place some calls.

Re: Ribs On WSM... Gettin' Better... More Questions...

Thanks guys. It was 20 minutes before the end, but according to my notes, it was a bit hot. Probably bad timing, come to think of it... ...or... come to think of the damn obvious!!!! :-D The bad news was the bits were a bit burnt. The good news is I ate them. It's the cooks privilege, you know? Ya.....

Re: CSBBC 2009 RESULTS *OFFICIAL*

Just to be clear, because I don't want to sound defensive nor do I want to start an argument... I believe that Hippieforever99 is actually underscoring my comment. That WAS my first competition and that comment I made was meant to underscore the importance of a baseline. Maybe I'm a bit cocky, bit I...

Re: CSBBC 2009 RESULTS *OFFICIAL*

Reviewing issues with some judges, there were vast differences in some scores. I have since been told that this is not abnormal with new judges, as a person becomes more experienced scores will tighten up quite a bit, it is just a matter of time. Thanks for the clarification. And, I agree 100%. Her...

Ribs On WSM... Gettin' Better... More Questions...

In a previous thread I asked for advice as I cooked up great ribs but they were a tad dry. Great advice, and I put it to use. Yesterday I cooked up a MUCH better set of ribs. Much more moist, although this time I probably should have taken them off about 20 minutes earlier. Family LOVED them. Okay. ...

Re: CSBBC 2009 RESULTS *OFFICIAL*

More instruction to the Judges and we will have to get some classes to local amateurs done before hand. Mike: I'm not sure how to "read" that, but I personally thought that the instruction the we got was excellent. Harvey painstakingly answered our questions--much of them asked by me--and made ever...

Re: CSBBC 2009 RESULTS *OFFICIAL*

Just wanted to say on behalf of my wife and I we had a FANTASTIC time at the event. What a fabulous experience it was to be last-minute judges. We learned a lot... and ate a lot... it was just an incredible time. We made a few new friends and look forward to competing next year. I'd like to personal...

Re: Ribs: How Hot Too Hot?

Thanks for the insight. And I can't help but agree with you. Years and years ago, back in the 1980's I worked at a restaurant and we had a competition night to see who could eat a dozen chicken wings. The manager brought in a bottle of stupid-hot sauce from Mexico. I LOVE hot, but this was insane. Y...

Re: Ribs Delicious--But A Tad Dry: Too Long?

Thanks for the comments. I was warned about the "absolutes" of bbq'ing... I guess it's like any other industry, there are always different points of view! No, I didn't foil, but I'll try next time. I DID spray them with apple cider, which probably helped. You know, I'm just LOVING this. The last tim...

Re: Ribs Delicious--But A Tad Dry: Too Long?

AD18: Thank you for your comment and clarification. Yes, I ONLY smoked the ribs with no other routines. I should have been more clear. I admit I'm having "newbie" challenges with getting the smoker at one set temp and then having it stay there. I've been reading up on the topic with tremendous enjoy...

Ribs: How Hot Too Hot?

Made up some ribs a week or so ago. Turned out fantastic. However, I do have a question. My daughter and I love it hot. My wife found the batch just way to hot for her tastes. Which... made me think... how hot is too hot for amateur competition? I'm not talking "scream-in-pain" hot. I'm talking just...

Ribs Delicious--But A Tad Dry: Too Long?

Had friends and family over yesterday so I whipped up 4 baby back ribs on the WSM. Put them on at 1:30 and took em off at 5:30 (4 hours). Cooked at a temp of approximately 225. Verdict? EXCELLENT... but a tad dry. They weren't as moist as my first batch. Everyone loved the rub, the sauce and of cour...

Re: Dual Probe Remote Thermometer

Follow up: at the risk of sounding negative, I'd urge everyone to stay FAR away from a Maverick. I called them on Monday and the gentleman said there was nothing he could personally do, but put me through to his manager. I got his voice mail and left a message with my plight. NOTHING. No return of c...

Re: Pork Butt and Brisket in Ottawa

A friend of mine is a regional manager of Costco. Essentially, it stocks by demographics. If it don't sell, they don't sell it. It's that simple... unfortunately.

I was just in today, and as mentioned above, they've got lots of popular cuts. Great deal on baby back ribs, for example. No brisket.
