Can't wait to see the pics, there is nothing like the wait and watch of a good long smoke!
I am still thinking I need something bigger - might be the last time I get to use the UDS this year, wonder if my wife wants ribs?

Damn, there is nothing wrong there! Those look awesome!
Would love to try that with a hot genoa or a mexican salami and maybe a slice or two of a fresh Habanero.

What are you barbequing / grilling this weekend?
I think I am going to try some moinks (meatballs wrapped in bacon) as seen here along with some jalapeno poppers on the UDS if the weather is good.

Re: Hello from London, Ontario!
No I got it from Porky's BBQ here in London, it was the last year they made them in America apparently the quality has diminished since.
I love that bbq, have done a lot of smoking in it before I made the UDS.

I have never seen Tri-tip in any supermarkets around here (London, Ontario), does it go by a different name?

Re: Where to buy a WSM in Canada?
Home Hardware is a Weber stock carrier, they might be able to order one from you, other than that Basspro.com (they ship Canadian orders from Canada)
Why not take a stab at making a UDS? Bigger and better than a WSM
Hope this helps!
