Booze, it is not just for drinkig

A recent post asked what peoples favorite drinks are. How about peoples favorite drinks for cooking with? I really enjoy cooking with booze. Some may find it a sin to use alcohol for something other then drinking but I like to use alcohol for cooking as much as for drinking. Some of my favorite beve...

Re: Ribs On WSM... Gettin' Better... More Questions...

I think your next step is to invite me over to judge your ribs as I am a KCBS certified judge. For competition you should not worry to much about the blackened end pieces as you will not be turning int he end pieces too often. In comps you may cook up several racks of ribs to get those best 6...

Re: Spare ribs at Costco?

Don't get me wrong I really like Costco for their meat and there back ribs are my first choice above all others. Nobody sells back ribs with the amount of meat that Costco has. They have good chicken and fish. It has been a long time since I had their steaks as they are just too large for me. If the...

Re: First attempt at pulled pork

I have (in the past) smoked on a propane grill and if you can maintain a good temp try to just use one burner and the far side and place the meat on the other side. I find that using two outside burners does lead to some drying out of the edges of the meat if it is too close to the direct heat. If y...

Re: Smoking a pork butt.

This depends upon how much smoke flavor you want to have. If you want a good smoke flavor then smoke away. If you want a little smoke flavor then just add smoke at the beginning. Once the meat reaches about 160 it will stop taking smoke. Also just use 190 as a guide and it still may not be tender at...
