Im extremely rough on cimneys i use the turkey cooker burner to light it...the last cheap ones i got it melted the rivets i had to spot weld it together..

it was a pepper specific site......I ordered a pepper corer off of it dont even recall what site it was...doesnt hurt to look outside of the box now and again....lol

I have used the metal ones ...lots also I have one i made with a maple board and drilled holes in it works good in low heat kinda like the planking idea saw that on another site..

When spit cooking the stuffing acts as a filler and keeps everything snug and centered on the spit even though I have a real nice rack system the 180-200 lb hogs want to flop a bit after they shrink ........ have a good day...I just put a few racks of ribs on the green egg i cant wait to get at them...

I cook alot of pigs I always stuff them.... mostly with a traditional turkey type stuffing but with apples I find it flavours the meat how ever I have stuffed them with potatoes,chickens,sausage,roast beef . all apples there is no limit...I put the stuffing into a cheesecloth bag that i make up it m...

I have induction and it is close to gas I had gas before I move to this new place .......it is super fast and steady I like it because it stays at an even temperature for ever...

See if your butcher deals with Norpac (Norwich Meat Packers) if he does have him order you some from there they are all AAA beef and are whole packers...I but a case or two (5 to a case) at a time most are 11-13 pounds I have gotten bigger from him also but you have to let them know ahead of time.. ...

I have cooked numerous roasts on a spit (and large ones)never over open fire but have never had the spit cook from the inside...i dont think it could be possible the heat has to penetrate the meat to get to the steel...on my cooker i cook about 10 lbs per hour at 400 degrees ..a 30 lb roast takes 3 ...

yes i cook pigs ...about 10 or more a summer im cooking a 159 lb this weekend it cost$159 ....
I cook on charcoal on a self contained rotiserie(sp)
its my 3rd one we built it 2 summers ago....

I have cooked alot of whole pigs I mean alot...I have been cooking since my oldest boy was a baby and he is 28.so even if I cooked on average 10 a year thats 280 pigs but i know that some years I have cooked over twenty.Ive tried the brining and it has never worked that well ,it gets some penetratio...
