This one cooked for 14 hours. The bottom was a little burnt. It was a little dry I think this is because we didn't let it rest and the flavor was OK but nothing to brag about. Hi Julian. I have never cold smoked anything so... the only thing that I can think of is over smoking the food and the smoke being stale so to speak other than that, I'm not certain.

I also would recommend pulling and freezing. I just want to add that if you do, pull it into a bit larger pieces then you normally do. I find that the consistancy stays nicer that way when you go to reheat. You can pull it into a more appropriate size once it is reheated. Hope this helps

Wow, now that is alot of pulled pork :shock:. Your presentaion is very Luau inspired. Very pretty with all of the fruit. Do you add sauce or rub to it afer you pull but before you serve it or do you just pull and serve?
