I like the taste of real blue cheese without all the additives and additional fat from dressing, I also like it to be creamy and chunky at the same time. I've made it by simply adding some blue cheese dressing. I find you get the flavour and extra creaminess without turning the potatoes grey. Nice job ribfan, those roasts have a nice bark on them.
I usually buy picnics too because they're usually a good price (not hard to find on sale) and then de-bone them and use them for jerk pork, cochinita pibil, etc.

I've still never used maple. I'm surrounded by it, burn it in the fire-pit, but never smoked with it. That's on my to do list for sure.
