Re: WTB - WSM or ProQ Excel 20

Did you get anything yet as I have a ProQ that I could be separated from. Bet you got a frontier as I think Duncola and myself are the only two around with a Excel 20. Too bad, its a good little cooker. If I didnt have 3 of them I would take ya up on it. I looked at pictures online and you are corr...

Breakfast Fattie - BBQ Porn

I made a breakfast fattie the other day and thought I would share. This was a last minute decision so I just used ground pork and not sausage meat. Rolled it out and sprinkled some rub. http://farm4.static.flickr.com/3378/3492221400_896974b6f9.jpg?v=0 sprinkled on some scrambled eggs, crumbled up ba...

Re: HELP ME DECIDE!!! ASAP!!! Smokers!

Between the two that you are asking about I would go for the smoke vault. If you can find them pick up the Great Outdoors Smokey Mountain propane smoker. I have the wide big block version and it is a great smoker and can cook up a good feast. The purists may frown on a propane smoker but they do coo...

Re: Happy Friday...What's Smokin' This Weekend?

I am stocking up for the farmers market in a couple weeks so I cooked 10 8-10 pound butts (105# total) on my CS Whole Hog. Started them at 10:00PM last night. First came off at about 3:00 this afternoon and the last came off at about 7:00 this evening. Pulled the last one at about 10:00. I have been...

Re: Traeger Pellets query

Here is a another good read for you. http://bbq.about.com/cs/cookingtips/a/aa051097.htm A lot of the flavor that you want to use depends upon what food you are cooking. Also a lot depends upon personal taste. One of the most popular wood used for smoking is Hickory. Hickory is by far the most common...

Re: Where is Pro-Q?

I am not sure but I do not think the ProQ is being sold around here any more as they are not advertising on the forum any longer. I do see them still advertising on The Smoke Ring however. Nothing about Pro-Q in the link. Looks like they've given up on the NA market. I guess my options are down to ...

Re: Butcher in Ottawa

What are you selling at the Carp Farmer's market? Just curious, as we go there a lot. I don't know of any reasonably priced butchers in Ottawa. We buy our pork and beef at Costco and chicken at Nicastro's on Merivale Road. One butcher that is likely to have the cuts you mentioned is The Butchery in...

Re: Butcher in Ottawa

The butcher shop has gone out of business? That is news to me. I was just about to head over there this morning. I am searching for a good shop myself as I am vending at the Carp Farmers Market and need to find a good constant supply of shoulders. I will let you know what I find here in the next few...

Re: First try - Pork Shoulder Picnic-sorta a win..but mostly not

Next time if you have similar issues once it gets to 150 internal wrap in foil and finish in the oven at the same smoker temperatures of 225 or so if you can afford the patience. Once you reach around 160 the meat is not going to take too much more smoke so you should not effect the smoke ring. And ...
