Re: Anyone deal with malabar superspice?

I think I'd give them another chance. I've dealt with them on three occasions and they've been very professional and helpful. They only sell to the public on one day of the week-- Thursday, I think-- and there's nothing to browse, really, as you're confined to a front area while they go and get the ...

Re: Curing product?

Malabar Superspice, in Burlington, may be about 1/2 hour away. They're at the west end. I just came from Cambridge and it took me just over 1/2 hour to the east end of Burlington.

Re: Vacationing with the Small BGE

I'd be okay with the canoeing, it's the 1850m portage that starts my trip that would be a real test.

Re: Vacationing with the Small BGE

That looks great, Wayne. I wish I could haul one of those into Algonquin Park with me next week-- that egg would look great with a 3lb speck sizzling away!

Re: Jerk pork tenderloin

Thanks, Gary.
I haven't grilled a tenderloin in ages so I was glad it turned out okay. My daughter loves it and we're trying to get her onto hot food, so this was a nice low-heat intro for her.

Re: Charcoal closeouts

Hi Gary, thanks for the correction. I've heard that they want to get rid of the HST ( ) I guess it's an election year, eh? I called the Nella, on Finfar, and they said they had a good supply of charcoal there too, so I'll see who has it before we make the trip. I'm almost out, that's why I wan...

Re: Hawaiian Pork/ Kalua Pig?

I've used banana leaves to make cochinita pibil a number of times, but only in the oven. I'd say that if you want a smoke ring then smoke the butt (or picnic) for at least a few hours before wrapping in leaves and/or foil. Banana leaves will dry out and become brittle pretty quickly, so foil isn't a...

Re: Help with some grey soot

Can you post a pic of the soot? My first thought was a fire in the drip pan, but you've likely cleaned that by now. My second guess would be the actual cleaning product carbonizing and falling from the inside of the hood. My last idea would be contaminated fuel. I've had that before and it's not pre...

Re: Charcoal closeouts

I'll get back to you guys as soon as I talk to nella and find out the particulars. Roger and Buttonbone, I've spoken with Nella and the price is 12.50 + GST (6%) for a total of 13.25 per bag, if we get more than 20 bags. I'm in for 10, so you guys decide what your needs are and we'll go from there....

Jerk pork tenderloin

I marinated this tenderloin for about 24 hours in a jerk sauce I picked up at the Hot and Spicy Food Fest in Toronto last weekend. It's not actually very spicy, but great flavour. Grilled for about 8-10 minutes each side, with a little twist at the 4 minute mark. Turned out pretty juicy after restin...
