i might be interested in going in on a bulk purchase. how big are the bags you speak of trev? and is the price $12 tax included? I can't remember if taxes were included in price or not, BB. I'll check and let you know. The bags are the 18lb size. I think last time I got it we picked it up at ~ 400/...

There's nothin like a nice grilled steak. Potatoes and onions in the foil is always an ol' standby for sides, too. Love it. What a weekend we've had for it, eh? Not a single crappy day and it looks good for tomorrow too. I'm headed back down to ribfest for a couple more racks and an onion mum.

The sauce was made with 1.5c drippings (no fat), 1/4c molasses, 1/4c ketchup, 1T granulated garlic, 1t cayenne, 1 star anise, s&p to taste.
I was going for a dry garlic type of sauce, like VH and this was pretty close. I love garlic with beef.

Dale, the bone is an excellent way to check a roast, although, like a temp probe, it's only an indication and not guaranteed. I usually go up to ~200 and check for tender, but I've found that going much above 200 and I run the risk of making the roast dry. Butts and picnics are pretty forgiving, but...

How cheap? I need to do another bulk buy of Maple Leaf lump as well, if you're interested. If we can each take 10 bags or more then we can get it for $12/bag.
Let me know if you'd like to go halves.
I guess it depends on where you live also. This deal is near the GTA.

I get spares there often. It's 2 full racks folded, but these suckers are big. I cut them and still get 4 decent sized racks. They may not be the same quality you can get from your local butcher. I'm not sure. I don't have any complaints so far, except for a bad pack I got last year.

Boneless leg of lamb, rubbed and injected with onion water and cayenne, 3 beer can chickens and a dutch oven full of red beans 'n rice.

Peter, I tried spraying them but it dried off so fast I thought it wasn't making a difference. Is there a trick to it, or something I could add to the apple juice to make is stick (so to speak)? I need to give it a try again; foil isn't cheap and I despise throwing the stuff out after a single short...
