Then i asked the kid working nearby he said its 2 in a pack just folded over? they really looked like 4 to a pack but i belived him and got the back ribs instead. Anyone e...

Re: Buying brisket

I am located in Cambridge Ont. The briskets have been in the cryovac when i get them. Last one was just shy of 10 lbs. Next time i will ask for a monster and see if it gets me a better ratio of flat to point. The butcher i have been dealing with has been nothing short of stellar as far as service an...

Re: Dual Probe Remote Thermometer

I spoke too soon. I've had my butt on the smoker for 12 hours now and this morning the read on the Maverick just didn't feel right. So, I went out with a regular probe and... holy crap... the Maverick was WAYYYY off! Both in the temperature of the meat and the WSM. I mean, way off. It said that the...

Had i seperated the last one i did it would have easily been 2/3 point to 1/3 flat. Am i getting not so good briskets or is that just how it i...

Re: Royal Oak "star grill" lump

Roger, buy a bag and give it a shot! See what you think and go from there.... I've used it from time to time (especially when it's on sale somewhere). I'm pretty sure they use flooring scraps, I've seen finger joints included in the bags. Many, many folks in the USA and Canada don't have access to ...

Royal Oak "star grill" lump

I'd prefer to use basques but its not availible as close to home as i would prefer. Right now i am using maple leaf that i can get at rona. What do people think of royal oak? its a bit cheaper than the maple leaf aswell.

Re: Second pulled pork

even at 285 you could have left it on the bbq till it was done. Make a smaller fire and add unlit coals as needed.
