I take a medium size potato, cut a flat on it then stick the oven/smoker probe through it. You can do this vertical or horizontal depending on where you want the probe. Looks good Aces, I took my first butt off at 190 the next time it was at 195 and it made quite a difference.

I use a pair of old leather work gloves to handle Smoker (WSM), BBQ parts and fuel. For anything with food I use oven mitts or pads or a folded cotton tea towel. I was given a set of teflon/plastic mitts as a gift. They protect your hands from the heat, but I find them hard to feel what you holding.
