Hello Roaster, I have no special shelter for cooking. I do have a portable wind break that I use. It is made of three panels of ¾ inch ply wood each being 2 ft wide and 4 ft high. The wood came from a construction site at work so the only cost was the hinges ($15). It's not pretty but works great. ...

Seasoning a New WSM

When I get my WSM should I season it? That is to say should I fire it up with nothing in it other than the water pan (water in the pan) and grates, to burn off any manufacturing oils, paint smells etc.
