Stuffed Pork Loin

this was a first attempt...sorry no pics

2-3 Lb Pork Loin
Brined it for about 6 hours...could've been longer, but I wanted it for dinner!!
Removed from brine, fileted (spelling?) it.
Stuffed with herbed Goat cheese (from the package) and a boatload of spinach
Tied it up then marinated in OJ, LJ, 3 chopped green onions, 5 cloves garlic, rosemary, black pepper, soy sauce, worstershire, honey and some crushed chili's. I did this all to taste, so I can't really give measurements.

I used the gas grill this time but indirect with a little apple wood in a smoke pack.

It cooked at 375 until 160 internal.

Glazed it here and there with an OJ, honey, worstershire and cayenne pepper mix.

Served with assorted bell pepper halves filled with garlic slices, pesto and a bococcini ball. (courtesy of Rob Rainford!!)
{half a bell pepper, brush with olive oil, put in garlic slivers, place on med heat grill put in a bit of pesto and a bococcini ball...then a little more pesto. the cheese will melt and mix with the pesto...just don't burn the pepper!!)
