Ham Hocks

Hey guys, I want to do something with Ham Hocks on the Smoker or Gas Grill
anyone got some ideas? Never tried a Ham Hock before.

Just looking to grill something....

set in a brine for a day,
then smoke for 6hrs on low

the Slovaks simmer for 5 hr in a crock until fall off the bone
strain gently and pull meat away from cartlege, bone, and fat.

serve with homemade mustard on fresh bun or.....

place back into broth and finish the broth with onion, celery, green cabbage, caraway seeds and salt & pepp to taste.

the dish is served over egg noodles, this is the ultimate soup!

you should try pork tails, they are even better than ribs....more fat, more flavor
just make sure you take the skin off first.

Ham hocks are a great compliment to beans, soups and stews. I smoked some for split pea soup last year and man is it good. If you like to make baked beans then you can't go wrong with the meat from a hock or two in there as well. Once you start using them the ideas will really start to flow. It's excellent, flavourful meat.

I've used hocks in soups, awesome in split pea soups boils and ghouls, but I have got to try them in beans.
When it comes to beatin's, baby you deserve the best.
