Crock Pot Beef Braising Ribs

I had some beef ribs that I wanted to cook up, but the weather was so dreary and nasty that I decided to stay inside where it is warm and dry and whipped them up in the crock pot. Super simple and they came out excellent!! This is a great one to throw together before you head for work to have ready and waiting when you get home. Sometimes you just gotta love the crock pot!

3 - 5 pounds beef braising ribs
salt and pepper
1/2 medium onion - thinly sliced
1/2 green pepper - thinly sliced
1 small can tomato sauce
2 heaping tablespoons tomato paste
1/2 cup packed brown sugar
1 can pineapple chunks and juice
2 tablespoons worcestershire sauce
2 cloves garlic, minced
1/2 tablespoon Texas Chili Mix
2 tablespoons sour mash whiskey
1/4 cup apple cider vinegar

Season ribs with salt and pepper and put in crock pot.

In a bowl, combine remaining ingredients and pour mixture over the ribs. Cover and cook on low setting 8 to 10 hours, or until ribs are cooked through and tender. Try not to peek as you want the heat to remain consistent throughout the cooking period.
