1 1/2 lbs of pure ground venison (no fat added)
1/2 lb of ground bacon
1 egg
1/2 cup crumbled soda biscuits
1 tbs worster
1 tsp garlic powder
1 tbs Montreal steak spice
Grind the bacon and mix in with the ground venison. Add remainder of ingredients and mix well. Refridgerate for 2 hours and form into patties. BBQ or grill to 150. As ground venison is very lean it is hard to grill or Q without drying out. Instead of adding plain old pork fat I thought I would try some el cheapo bacon I bought for 1.29 a lb and it turned our extremely tasty. I cooked it in my offset at 290 for about an hour with grapevine for smoke.

Thanks Peter. I have tried putting butter in the meat for moisture but it if you didn't get a real good seal when searing the patties it would run out. The bacon made a huge difference without altering the flavour of the meat. It still tasted like venison.
If it can't be smoked it ain't worth eating.
