Me and some of the local pitmasters in nashville tN. get together somtimes and talk BBQ.
The topic we talked about the other day was, What makes a true
pitmaster, his equipment or his technique?
I would like to hear comments from the forum.

a true pitmaster must contain:
true understanding of meats and how it works as it cooks
must have been through the trenches with tried and true recipes
must be able to read his/her pit at anytime!
a good listener, one who is not affraid to ask questions!
this just makes sense

Technique, always technique. A good pitmaster should be able to take a piece of junk and produce good Q on it, they'll de better with good gear, but still bury a schmo like me even if I had the best stuff.
Kinda like asking if a good guitarist or bass player is equipment or technique (talent also plays into it). Victor Wooten on a Dean would bury my sorry butt on an Alembic.

"master" implies experience and knowledge. An apprentice or a journeyman are on their way to great things but have not yet put in the time required to "master" a craft.

i agree totally. you can read any grill. you can read and prepare any meat. and most importanly, you can do it with ease which comes from a lot of practice.stevo wrote:A true pit master can Q on anything.....
