Beer brined turkey

I finally settled on my beer brine for the turkey on Monday...I was going to use an amber beer, but figured the dark beer might give it more flavor. I got some great local ingredients at fairs and shows this summer, so I figured I would put them to use...

2 quarts fresh apple cider
3 cups top notch maple syrup
3 cups bourbon honey
2 cups kosher salt
1/4 cup cracked black peppercorns
4 tablespoons Sweet Maple Rub
2 sticks cinnamon - about 3 inches long each
6 bay leaves
11 bottles dark beer

Combine the apple cider, syrup, honey, salt, peppercorns, Sweet Maple Rub, cinnamon and bay leaves in a large pot or bowl. Stir to thoroughly dissolve the sugar and salt.

Combine the mixture with the beer. Place the turkey in a large container and cover with the brine and, if necessary, weigh down with heavy dinner plates to completely submerge. Cover and refrigerate for 24 hours

Sounds yummy Joe but isn't that a waste of good beer?

I think when the cost of the brine exceeds the cost of the meat .... well!!! :roll:

Should taste amazing though!

Sounds exciting. Where would one get the "bourbon honey"? Or would any other honey work?

This does sound very good but I think the brine would end up costing more then the Turkey especially with the price of beer and maple syrup.
