Here,s an opportunity to design your own butt rub.
This method will give you a place to begin and will allow you to custom tailor your own signature rub.
Start with 4 parts salt (non-iodized)
2 parts each black pepper and paprika
1 part each granulated onion and garlic and chili powder. this is your base mix.
Now add some heat if you wish ... cayenne, chipotle or your own favourite.
Finish with cumin, ginger, rosemary, sage; the list goes on ....... remember that these last additions should be done carefully; all of these flavours really come out in the finished product. Keep notes and keep trying.
Fresh ground spices will have more intense flavour than packaged ground spices; be careful here.
Store spices in sealed containers in a cool, dark place. The cupboard right next to the stove is handy but is not a good idea.
Dry and wet rubs, basting and finishing sauces, glazes, mops, marinades, flavor brines, and injection solutions.
