Sweet Potato Pie

1cup cooked mashed sweet potatoes
2 tbsp. unsalted butter
2 eggs beaten
1 cup light brown sugar
1/2 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp freshly grated nutmeg
1 tsp. vanilla extract
1/2 tsp. salt
1/2 cup dark corn syrup
1 cup evaporated milk
1 1/2 cup chopped pecans
1 - 9" pie crust ( Pillsbury Ready Crust)

Preheat oven/grill to 375°. Place crust in pie pan, trimming crust as needed. Blend together the butter, sweet potatoes, eggs, brown sugar, ginger, cinnamon, nutmeg, vanilla, salt, corn syrup, and evaporated milk. Pour mixture into pie crust and sprinkle with pecans. Bake 40 to 45 minutes or until a toothpick comes out clean. Set aside and let cool.

Hazelnut Cream Topping:

2 cups heavy whipping cream
3 Tbsp. confectioner's sugar
1/4 cup hazelnut liquor
Wisk the whipping cream and confectioner's sugar on high speed until soft peaks form on the cream. Continuing whisking on high while you slowly pour in the liquor and maintain the soft peaks. Top the pie with the whipped cream and enjoy!
