Accessory's for a WSM

What accessory's would you get to make the most use of a WSM? I know a rib rack is one, but which one is best?

Thermometers!!! Some sort of instant read for taking the temp at the chimney is a good start. A digital thermometer to take the temp of the meat. I like the Maverick, here is a link for the Maverick.

I don't know if it's the best but Grill Pro makes a reasonable rack that works well with the WSM. I've seen them at Home Depot, Ontario Gas BBQ, and Home Hardware IIRC.

A decent digital thermometer for meat temps (Nu Temp and Maverick make some good remote transmitters) is a must.

A candy/deep fry thermometer you can pop through the lid vent is a good idea.

A charcoal chimney to start your coals is a must.

I've found a large, sturdy BBQ spatula like this can be a huge help:

A couple fire bricks and another round rack. Gets you a third rack for those ABT's.
Industrial tin foil to wrap the water pan.
Build a wind block.
Tones of pork
big cooler

and lots of b6 b6 b6
sit down, shut up and smoke some butts!!!!

On a more serious note, I did see (I don't remember what site) a rotissery setup for the WSM. It was homemade. Looked kinda cool for those cooks without the waterpan. Leg of lamb or something.

Thermo- ET-73 Maverick, a little finiky but great to use in cold weather, no need to go outside or open the lid until blastoff.
A 12inch foil wrapped clay pot (actually the saucer) acts as a heat sink and eliminates the need for water.

Okay how does this actually work? You just wrap the clay saucer in foil and sit it on the water pan? That's it, no muss, no fuss?

Yup, thats exactly how it works, I have used one on my last 5 cooks and have not noticed any difference whatsoever. I dont think I will be using water again, cleanup is now a snap. One word of advise, do not take the one from under your wife's hibiscus it could prove hazardous to your health! No sense of humor that girl.
