Vent question

Post by dannyboy » Thu May 28, 2009 9:35 am

Hi all:
For smoking and BBQ which vent is used to control the temperature; intake or exhaust? or does it matter?
I have a few half baked theories but need some practical advice.

Thanks
Dan

hello. i myself asked this question. as it was explained to me is the intake does the heat control , and the exhaust is just that, open all the way to exhaust the gasses from combustion.

my personell theroy is this. by adjusting both at the same time, and this helps drop or raise the heat level faster.

Generally you should leave the top vent fully open all the time. Adjusting the bottom vents should be all that is necessary to keep the temperature under control. Closing the top vent can allow bad things to happen, such as choking the fire back too much and causing creosote production.... this is a bad thing to have on the meat!

I have a WSM and the top vent is always fully open. I use the bottom vents to control the temperature. The only time I close the top vent is to put out the charcoal, the bottom vents are also closed at this time.
