Smoked Chicken
Yesterday, I smoked a whole chicken with my Weber Performer grill. It tasted great! The chicken was juicy and moist. I used mesquite wood chips. The chicken was about 6 pounds. I smoked it for 4 hours.

Re: Smoked Chicken
As Stevo suggested next time try some cherry or apple and you may think it was even better. I find that mesquite really only goes with beef and only in moderation.

Re: Smoked Chicken
ya Roxy, I was going to mention in my last post, mesquite is (in my opinion) one of those personal preference woods. My brother in law swears by it. the heavier the smoke tast the better. I made him a couple mesquite turkey sticks and he said that they needed more smoke flavour. I thought that there was too much (started appolagizing as soon as they hit the plate). For sure a personal preference. Like you I love the smell and tast of mesquite but as you mentioned, use sparingly.

Guess the bottom line is: if it tasted great then mesquite works for you.
