hey everyone
i am about to cook 40 chicken halves and 3 racks of ribs on a cinderblock pit with a set of grill racks on top. any advise would be greatly appreciated. wood, charcoal? cook times at what temp? and it is open no top

it's this sat afternoon but i think i have a decent chance a few friends of mine are goin to give me a hand. so far im using charcoal and ill try to keep the temp at around 250 as for cook times im goin to give it as long as i can

3 racks for 60 people seems not enough to me.
