Pork Butt question

Post by ahrjmrecr » Wed Jul 01, 2009 10:54 am

About two weeks ago I bought a 7 pound pork butt that I placed in the freezer because I am going to smoke this weekend. I was going to defrost the butt starting today and put rub on it tomorrow and leave it in the refrigerator until Saturday, when I will smoke it.

Do you think I will jhave any problems preparing the meat this way?

Thanks,

Jim

Personally I'd hold off on the rub until Friday night. Especially if there is a high salt content. Defrosting in the fridge for a few days should be fine.
