Shrimp Cocktail Wood Pellet Choice

I am going to make up some shrimp cocktail and am not sure what pellet choice I should use to cook them.

Normally I cook my shrimp for shrimp cocktail in the oven but would like to try cooking them on my pellet cooker. Normally I would use alder but I do not have any and they are out locally.

Here is what I have for my Traeger pellets:

Hickory
Apple
Cherry
Maple
Pecan

Which one should I use?

I am not smoking the shrimp, I am grilling but would like to use the best wood source.

I would use any of them. They are not going to be long on the grill to absorb that much smoke if any.

If I was to do up some salmon on a cedar plank what would be your wood of choice from what I have?

I would recommend a sweet wood for salmon

cherry or apple, leaves a nice delicate flavour that does not overpower. I would consider alder but you have none....

So, how did your shrimp cocktail turn out? Did you grill them or smoke them?

I came across a recipe tonite that called for smoked shrimp, and wondered if anyone had tried to "low & slow" some? I have some apple on hand, so I might give it a go this weekend...
