Did a couple of pork butts on the WSM at the end of this week, and threw on a couple rack of baby backs as well....
In the cryovac...
Trimmed the skin off...
Rubbed them up nice...
On the WSM they go...
Coming along well (after 9 hours overnight)...
Done and after resting, like a couple of meteorites...
One of the butts pulled (and chopped a bit)...
Then came the baby backs...
Dusted with rub...
On the WSM...
Coming along nice...
Done...
Good eats...

where you getting the butts like that with 2 in a cryo? i havent been able to find them like that.

Got those ones at Foodland in Stratford.... I can usually get them anywhere they are on sale, just have to ask. Most grocery stores usually get them in that twin pack, and them chop them up smaller for sale. Ask the butcher and they should be able to set you up.
