I'm testing out a new Jamaican jerk rub on a batch of nice, thick loin chops. Gonna smoke them for an hour or so, with a chunk of apple, then a quick sear at the very end.

DOH! Late entry.
Had a couple of big t-bones on last night. Came out yummy. A little dry (still working on technique), but yummy nonetheless.

I'm in the same boat, Sqeezy. My wife doesn't care for the smoke flavour, but loves beer can chicken off the gasser. When I do chicken this way I usually do 3 birds and freeze 2 of them. She loves it.Squeezy wrote:Going to do a beer butt chicken on the gasser ... no smoke ... her wishes ... not mine!

I think it loses some of the flavour and moisture when it freezes, but my wife doesn't seem to mind. She has a very peculiar diet to begin with, due to a medical condition. I prefer to get a good feed when it comes off the grill, but then leave the rest for her to deal with over the next week or so.

Well,.... I'll be busy tyin the knot for the first time ( and last ) this weekend and it's prime rib with all the trimmings.
But Sunday it's ribs on the kettle for a selected few from the festivites and next week I'm treating myself to a WSM.
Life is good
