St Thomas 'Canada Southern' Update: Sampling Approved!

We are pleased to report that we have received notification from the Elgin County Health Unit that teams will be allowed to sample in the categories of pork and brisket at the Canada Southern BBQ event! They reviewed our existing rules and food handling stipulations and only added a few minor ones of their own; namely headware for all in food handling capacity and in the preparation area and also aprons to be worn by food handlers. A full explanation of the sampling process will follow but at this point, highlights are:
- sampling direct at team sites appears to be best approach in getting product sampled quickly and efficiently
- 2 event volunteers per team will be available to handle ticket-for-product exchange
- tickets will be 5 for $5 with each sample being 1 ticket
- sample size to be minimum 1 oz in provided cups
- half of sample proceed directly back to team, half to event, thus $16/lb generated, half back to team
- teams can opt in or out of sampling and can make own determination of how much they want to have for sampling
- teams participating in sampling will have signage at site declaring this intention. Teams opting out will have 'team NOT sampling' signs so they are not approached by patrons looking for samples. Perhaps a list of sampling teams and locations will be handed out with tickets, or sampling teams may be grouped together. TBD.
- Turn-ins will be changed to make last two turn-ins the sampled categories of brisket and pork to better allow teams to sample to their chosen level of participation. Looking at a window for sampling of 5 minutes past the hour of applicable turn-in until the bottom of the same hr; 25 mins for sampling. Pork as last category (and easiest to sample/cook in volume) will have a longer sampling time if necessary to fulfill demand; again final arrangements coming soon, but we did want everyone to know that sampling is a definite 'go' for St Thomas!

Great news Mike i love the fact i can pass off some of hundreds of pounds of bbq we cook in these comps. :lol: Looking forward to hearing more & thanks for spending all this time. That goes for everyone else ( Mike & Mike )that has been working on this all along.
