Fresh Spices

I have a bunch of fesh spices that I just picked from my garden. Parsly , basil & mint . What would the best way to keep these for a while . I will be drying some out for dry but would like to keep some freash for a while if I could.

Don't wash them until you are about to use them. Keep them in a dry cool place between layers of paper towel. Thats about all I can offer on advice.

I don't know about the mint, however I have had good success with the basil and parsely.

In a food processor blend the herbs with a little olive oil until smoothish but chunky. Place into an airtight container, ziploc bag or small container and freeze.

You can also put the mixture into an ice-cube tray and once frozen put them into a bag. That way you have small amounts ready to go.

I've done it this way too, but a word of caution it won't freeze at 32 F you'll need to get it colder than that, and use plastic ice cube trays not metal ones, the oil can taint from contact with some metals.

Once frozen I like to put them into a Ziploc lined with grease proof paper, there is less chance of contamination this way. Then when you need some, pop open the Ziploc take out what you need and seal the rest back up until the next time you want some.
