Hello all,

I just purchased three packs of double rack baby backs in cryovac packaging. The packaging has a best before date of Aug 9 2009. It's Aug 4th today and I'm planning to smoke them in my WSM Aug 8th. Will they be OK in the cryovac packaging in my fridge until then or should I freeze them and defrost on Aug 7th.

They will be just fine. If you are concerned, toss them in the freezer and thaw just before you want to cook them.

I'd just refrigerate them, by the time they'd be frozen you'd just have to pull them out to thaw.
When it comes to beatin's, baby you deserve the best.

It would be the fridge for me too. My fridge takes 2-3 days to thaw out a chunk of beef or pork.
